Thanksgiving





Thanksgiving Check List - 2021


Shopping list - favor organic ingredients 


For the chicken broth:

One whole organic or Amish chicken, if possible, from Gerbers. It will have the neck, liver and giblets

2 medium onions

3 garlic cloves

2 sprigs of thyme 

⅓ bunch of parsley (maybe 8 to 10 stems)

2 celery ribs

1 big carrot


For the stuffing:

1 stick of butter

2 medium onions

3 medium celery ribs

1 ½ lb. cubed dense bread such as boule cut in ½-inch cubes -> around 15 cups of bread dried overnight or 2-3 days

½ bunch of parsley

I’ll be taking the poultry seasoning along (it’s made with dry rosemary, sage, thyme marjoram, celery salt and ground pepper)

I’ll use 4,5 to 5 cups of broth from the homemade chicken to moisten the stuffing


For the gravy: 

1 stick of butter

1 cup of flour

Utensils:

Roux whisk - let me know if you don’t have it and I’ll bring mine. Super easy to do so. This whisk helps to have a gravy without lumps

Big deep pan to make the chicken broth

Big roasting pan to bake the stuffing

Fat separator - very good to make the broth be healthier, without the heavy fat. Let me know if you don’t have it and I’ll bring mine

Big strainer to separate the veggies and chicken from the broth
